Who’s Senator Cappelli?
Senatore Cappelli is a historic variety of durum wheat that owes its name to the homonymous Senator of Abruzzo who revolutionized the practices of selection and cultivation of Italian hard grains. It has an intense scent, strong flavor and ears more than one meter and eighty meters high (they end with black mustaches called ariste). The stone milling allows to obtain a semola with an irregular particle size. A grain source of fiber, ideal for the preparation of bread and pasta.

The next question then is: what are ancient grains?
Ancient grains are varieties of the past that have remained authentic and original, that is, they have not undergone any modification by man to increase their yield.

7 reasons why we use them:
– contain less gluten.
– they’re less refined.
– are more easily digestible.
– we help small producers.
– are better and more property-rich.
– we protect biodiversity.
– we embrace historical and cultural values.
