In the kitchen with the staff: pizza dough in a baking tray

We know how difficult it is these days to find flour and yeast but if you were among the lucky ones we would like to see you at work.

What is it for?

– 250g type 1 flour

– 250g flour type 00

– 25g baking powder

– 13g salt

– 12g oil

– 350g chlorine-free water

Combine the flours with the water, add salt and oil. It is important to knead decisively by bending the dough on itself until a smooth and non-sticky ball is reached. Put the mass in a bowl, cover with film, let stand for 20 minutes at room temperature and 12 hours in the refrigerator.

After 12 hours let the dough dilute, divide it and weigh it. 600 g is the weight for each baking tray while the remaining 400 g can also be used to make bread. Rest the mass again to reactivate the leavening before laying it on the plaque.

Turn on the oven at 200 degrees while laying the tomato and working the base. Cook the dough with only the sauce for about 10 minutes, season to taste and bake the baking tray for another 5/10 minutes. Uncork a fresh beer to enjoy pizza in company!
